August 2024 29 Pork News & Views Better Pork | August 2024 Highschool Hospitality Students Learn the Art of Butchery with C’Angelina Meat Catering Students from the St. Joseph High School hospitality program recently had the opportunity to participate in a hands-on butchery workshop hosted by C’Angelina Meat Catering, an Italian-inspired butcher shop in London, Ontario known for its commitment to food education. The students were able to break down an entire pig, giving them a first-hand insight into where cuts of pork come from, how much meat you can get from just one animal, and just how versatile pork can be. C’Angelina is owned by siblings Carmine and Angelina Janni-Alice, who believe in the importance of authentic food and honesty with their customers. Beyond fresh home cooking with simple, quality ingredients, Carmine says what really sets C’Angelina’s apart is that they also offer artisan sausage workshops and meat cutting demonstrations. “From farm to table we want people to see how their food gets to that plate.” This field trip is one students won’t soon forget, as they not only learned how to make sausage, but also how much meat comes out of just one pig. The students’ culinary instructor, Kent Cherevaty, says “This is a 10 out of 10 for our students,” “For them to see the whole process from beginning to end, where their food comes from and seeing the different cuts, it's a great learning experience.” One student, John Crissan-Diaz, says he has a new appreciation for how pork is produced: “The way farmers raise pork, they do it in a way that it is clean, it’s a great food raised with care so that people will benefit.” Another student, Zoee Epple, says the meat cutting demonstration was an extremely valuable experience: “This showed us just how pork is really one of the best meats.” Their insights highlight both the success of this field trip and the importance of these opportunities. It’s a life lesson where Carmine isn’t just teaching knife skills, but where he's curating and guiding the next generation of culinary experts, “Seeing the enthusiasm from students gives me a great sense of joy, I’m happy to teach them.” The Importance of Food Education Food Education can generate support for the pork industry and helps to highlight the work of our pork producers.
